Week 2 Recipes

Lazy Chicken:

3 lb boneless, skinless chicken breasts
1 (25-oz) jar pasta sauce
1 c mozzarella cheese

Combine ingredients in gallon size Ziploc.  Label: Place in 4 qt. slow cooker.  Cover and cook on low for 8 hours, or high for 4-5 hours.  Serve topped with mozzarella.  Serve over noodles of your choice.


Bacon and Cheese Chicken:

4-6 chicken breasts
1/4 c teriyaki sauce
1/2 c ranch dressing
1 c shredded cheddar cheese
6-12 pieces of cooked bacon, crumbled

Combine ingredients in a gallon size Ziploc.  Label: Place in 4-qt slow cooker.  Cook on low 6-8 hours or high 3-4 hours.


Fajitas:

2 lb thinly cut stir fry beef
1 onion, sliced in rings
1 orange bell pepper, cut in strips
1 yellow bell pepper, cut in strips
2 packets of fajita seasoning
1/2 c water
tortillas
favorite toppings (salsa, cheese, sour cream, avocado, etc.)

Combine ingredients (all but tortillas and toppings) in a gallon size Ziploc.  Label: Place in 4-qt slow cooker. Cook on low 8-9 hours, high 6 hours.  Serve over tortillas with favorite toppings.


Layered Dinner:

1 1/2 lb rib-eye steak
1 tbsp of your favorite seasoning rub (I use Montreal Steak 25% less sodium)
1 onion sliced in rings
1/4 c apple juice
2 tbsp Worcestershire sauce
2-4 baking potatoes (I usually use 4 smaller or 3 big)
2 ears fresh corn, halved

Use 6-qt or larger slow cooker.  Rub seasoning on steak.  Combine steak, onion, apple juice, and Worcestershire sauce in a Ziploc.  Label: Put steak in bottom of 6-qt slow cooker.  Wrap potatoes in foil and place on top of steak.  Wrap corn in foil and place on top of potatoes.  Cover.  Cook on high 5-7 hours or low 8 hours.


Orange Chipotle Ribs:

3 pounds ribs
1/2 c ketchup
1/4 c orange marmalade
1/4 c cider vinegar
2 tbsp low-sodium soy sauce
3 tbsp brown sugar
4 minced garlic cloves
2 tbsp chipotle chili powder
1/4 tsp ground cumin
1/4 tsp ground ginger

Put ribs in gallon size Ziploc.  Mix all other ingredients in a bowl and pour into bag over ribs.  Label: Use 6-qt or larger slow cooker.  Cook on low 8-9 hours or high 5-6 hours.


Pineapple Pork Tenderloin

1 1/2 to 3 pounds pork tenderloin
2 tbsp brown sugar
1/2 tsp Italian seasoning
1/2 tsp salt
1/2 tsp black pepper
3 tbsp cornstarch
2 garlic cloves, chopped
1 orange bell pepper, seeded and sliced
2 tbsp low-sodium soy sauce
1/2 c apple juice
1 20-oz can pineapple chunks

Combine meat, sugar, Italian seasoning, salt, pepper, and cornstarch in Ziploc.  Seal and shake to coat.  Open Ziploc and put the rest of the ingredients in bag.  Label: Place in 4-qt slow cooker.  Cook on low 7-9 hours or high 4-6 hours.


Beef Stroganoff:

2 lb beef stew meat
1 large onion, chopped
1 can condensed cream of mushroom soup
1 can condensed cream of onion soup
1 can (8 oz) sliced mushrooms, drained
1/4 tsp pepper
1 package cream cheese, cubed
1 container (8 oz) sour cream

Combine beef, onion, soups, mushrooms, and pepper in gallon size Ziploc.  Label: Place in 4-qt slow cooker.  Cook on low 8-10 hours.  Stir in cream cheese until melted.  Stir in sour cream.  Serve over noodles.
